Ingredients
- 1 1/4 cup flour
- 3/4 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 stick butter, divided
- 1 banana, divided
- 1/4 cup International Delight French Vanilla Creamer
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 cup coconut

Step 1
In a large bowl, sift together flour, sugar, baking powder, and baking soda. Using a pastry blender or two knives, blend in 5 tablespoons of the chilled butter. Set aside.
In another bowl, mash half of the banana with the back of a fork. Whisk in creamer, egg, and vanilla until well blended.
Gently pour in wet ingredients into dry ingredients, stirring until just moistened. Spread evenly into a greased 9 x 9 square baking dish. Bake at 375 minutes for 20 minutes or until a cake tester comes out clean.
Remove cake from oven, but leave oven on. For the topping, melt the remaining 3 tablespoons butter. In small bowl, mash the remaining 1/2 banana and whisk in melted butter. Stir in coconut. Spread evenly over warm cake.
Bake an additional 7 - 10 minutes or until topping is just starting to brown. Cool completely before serving.
