Ingredients
- 32 steamed mussels
- 2 tsp. olive oil
- 1 medium onion, peeled & chopped
- 2 large shallots, peeled & minced
- 1 jalapeno pepper, stemmed, seeded, & minced
- 6 large tomatoes, chopped
- 2 tsp. fresh rosemary, chopped
- 2 tsp. salt
- 1 dash pepper

Preparation
Step 1
1. Steam the mussels. Set aside the mussels and broth.
2. Heat the olive oil in a medium skillet. Add in the onions, shallots, and jalapenos. Sauté until soft (about 5 minutes).
3. Add in the tomatoes, 1/4 cup of the reserved mussel broth, and the rosemary.
4. Cook, stirring often, until the tomatoes are soft and the sauce is thick (about 15 minutes).
5. Add in the salt and pepper. Add the mussels, and cook for about 1 minute.
6. Divide among 4 plates, and serve immediately,
