Ingredients
- 1 medium ripe avocado, in small dice
- 1 tablespoon freshly squeezed lemon or lime juice
- 2 tablespoons chopped fresh mint
- 60 grams crumbled light feta
- Maldon salt and pepper to taste
- Bread of choice - I put it on half of a toasted Harvest Bake Quinoa and Seed flavour with smoked Maldon salt and a pinch of Aleppo pepper - yummy

Preparation
Step 1
Use a fork to mash the avocado to a chunky paste. Add lemon, mint, pepper and salt and mix until evenly distributed. Gently stir in feta, then add additional salt and pepper to taste. Toast bread and spread avocado mixture on the warm toast.
