Ingredients
- 1/2 ripe avocado
- 1/2 tablespoon of lemon juice
- 1/8 teaspoon of ground cumin
- 30 grams feta
- A generous pinch of salt and pepper
- toasted whole grain bread
- Chopped parsley or mint to garnish

Step 1
Scoop the avocado flesh into a small bowl, mashing it lightly with a fork. Add lemon juice, cumin and salt and pepper and mix until well combined.
Top the toast with the mashed avocado mix then the crumbled feta. Garnish with fresh parsley or mint and season further if required.
