Ingredients

  • 8 cups flour
  • 1 cup sugar
  • 1/2 lb butter
  • 1/2 tbs salt
  • 2 cups milk
  • 3 egg yolks
  • 2 whole eggs
  • 1 1/2 pkg yeast (3 3/4 tsp)
  • Filling
  • 5 cups finely ground nuts
  • 2 1/2 cups sugar
  • 12 egg whites beaten stiff
  • 2 tbs honey
  • approx 3/4 lb each ball

Preparation

Step 1

Please yeast in 1/4 cup warm water with a dash of sugar and set aside. Scald half of the milk. Take milk off stove and add the butter to melt. In a bowl, combine sugar and salt. Add scaled milk and butter mixture, mix well. Stir in egg yolks, eggs and remaining milk. Add yeast mixture. Begin to add flour one cup at a time. Dough will be sticky but shouldn't stick to your hands. Knead for 10 minutes. Place dough in a cover bowl to rise until double in size. Punch down and shape into 7 balls. Cover with a towel to rise for 30-40 minutes. Roll each ball into a 9x15 rectangle (use the silpat0 Spread with filling, roll up and place in parchment lined pan. Brush tops with beaten egg yolk and water mixture. Poke each roll with a fork.

Filling:
Combine all ingredients; blend well. Bake at 345° for 25-35 minutes.
