AVOCADO TOAST - Harissa, Smashed Avocado and Egg Toast with Goat Cheese and Honey Drizzle

Ingredients
- 1 slice whole grain bread, toasted
- 1/2 tablespoon homemade or store bought Harissa paste
- 1/4 avocado pitted and peeled
- pinch of salt and pepper
- 1 tablespoon oil-packed sliced sun-dried tomatoes
- 1 ounce goat cheese or feta, crumbled
- 1/2 teaspoon honey
- 1/2 teaspoon fresh lemon zest
- 1 egg - poached, fried or hard boiled

Step 1
Preheat the broiler to high.
Add the avocado to a small bowl with a pinch of salt and pepper and lightly mash using a fork.
Place the toast on a baking sheet and spread with a little bit of Harissa. Next evenly spread the mashed avocado over the Harissa. Top that with the sun-dried tomatoes and the cheese. Set aside.
Cook egg to your liking. About 1 or 2 minutes before your egg is done, pop the toast under the broiler to warm. Remove the toast and drizzle with a little honey.
When the egg is ready, top toast with egg, zest some fresh lemon over top and sprinkle with salt and pepper.
