Four Bean Salad

Ingredients
- 1 10oz package frozen lima beans
- 1 9oz package frozen cut green beans
- 1/3 cup tarragon or white wine vinegar
- 1/4 cup sugar
- 3 tbsp. olive oil
- 3 tbsp. Dijon mustard( I prefer coarse grain)
- 2 tbsp. chopped fresh parsley
- 1 1/4 tsp. kosher salt
- 2 cans (15 1/4-19 oz.) Red Kidney Beans, rinsed and drained
- 1 can (16-19oz) White ( Cannellini) Beans, rinsed and drained

Preparation
Step 1
1. Prepare lima beans and green beans as directed ( do not add salt), drain
2. In large bowl add vinegar, sugar, olive oil, mustard, parsley, and slat. Whisk until well blended. Add kidney beans, cannellini beans, lima beans and green beans, tossing gently till coated
3. Cover and Refrigerate for at least 6 hours, occasionally stirring mixture gently
4. Serve
