Garden Vegetable Caprese Salad

This salad is a variation on the traditional Caprese Salad- because I love vegetables and wanted to add more. So I did. And it was amazing! One of the best things about this salad is that it stores well. It might actually even be better the 2nd day, when the vegetables and fresh mozzarella have had a chance to absorb the deliciousness of the vinaigrette. Try it- you’ll love it.

Garden Vegetable Caprese Salad 0 Picture

Ingredients

  • 1 large tomato, sliced into 1/2″ chunks
  • 1-2 cups grape tomatoes
  • 1 about 1 cup diced bell pepper {mine were large- I used 1/2 of the green and 1/2 of the orange}
  • 1 cucumber, diced
  • 2 TBSP diced red onion
  • 1/2 about 1/2 cup diced fresh mozzarella chunks
  • 1/4 cup minced fresh basil
  • vinaigrette {you’re welcome to use your favorite – I included the recipe for my favorite below}
  • Red Wine Vinaigrette
  • 1/2 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp black pepper
  • 1 tsp salt
  • 1/2 tsp sugar
  • 2/3 cup red wine vinegar

Preparation

Step 1

Wash all produce. Dice/ chop/ mince to your heart’s content. Toss salad together with vinaigrette and serve.


Combine dressing ingredients in a jar and shake well to mix.
