Grilled Romaine

This totally took me by surprise, but grilling a half of Romaine is freaking delicious! It's like a wedge, but rather than Buttermilk or Ranch flavors, this gives you the smokiness of a grill while remaining light.

Ingredients

  • 2 heads Romaine
  • 3 tablespoons olive oil
  • 1/2 fresh lemon (or about 2 tablespoons Lemon Juice)
  • Kosher salt
  • Black pepper
  • Parmesan

Preparation

Step 1

Slice the Romaine in half length wise (you can quarter it as well; I do for the kids who eat smaller amounts)

Brush both the cut side and the back with the Olive Oil (you should have some left over)

Sprinkle with some salt (just a pinch or two)

Grill on a already hot grill (on High), cut side down for about 3 minutes. The edges will start to char, which is ok. Press down as well to make sure you get some nice grill marks on the bottom.

Flip and grill on the uncut side for another minute or 2.

Remove from heat and squeeze the Lemon Juice over the cut sides. Drizzle remaining Olive Oil and then sprinkle another pinch or 2 of Salt and Pepper. Finally, a dusting of Parmesan.

Serve Immediately and be prepared to be wowed.
