Ingredients
- 1 1/2 cups warm water
- 2 tsp active dry yeast
- 1 Tbsp granulated sugar
- 2 Tbsp + 1/4 cup barley malt syrup, divided (can substitute brown rice syrup or honey)
- 3 1/2 cups bread flour, plus additional for shaping
- 1 Tbsp salt
- Olive oil for greasing
- 1 large egg whisked with 1 Tbsp water
- Seasonings: pretzel salt, sesame seeds, onion flakes, nutritional yeast, garlic flakes, poppy seeds

Preparation
Step 1
Preheat oven to 425. Pour warm water into a small bowl, dusing with yeast and sugar. let stand until yeast dissolves and begins to foam, about 5 minutes. Stir in 2 tablespoons barley malt syrup.
In a stand mixer on low speed, combine flour, salt and yeast mixture. Knead dough on medium speed until elastic, about 8 minutes. Move kneaded dough to a greased large bowl. Cover bowl with plastic wrap and allow dough to sit for 1 hour, until it has doubled in size. Move dough to a floured work surface, then divide into 8 equal sized pieces.
Mold each piece into a ball. Using your thumb, middle and index fingers, create a hole in center of each piece, spinning the dough around your fingertips until you've formed a ring. Keep in mind that the bagel holes will shrink in the oven, so consider making them larger than you think. Place the bagels on a floured baking sheet, cover with a damp towel and let sit 10 minutes.
Fill a large stockpot with 6 quarts of water. Whisk in 1/4 cup barley malt syrup. Bring water to a boil. Then, using a slotted spoon and working in batches, lower bagels into water. Allow them to boil 1 minute per side. Transfer bagels to a rimmed sheet pan lined with parchment paper and greased with olive oil. Brush each bagel with the egg wash, then sprinkle with your seasonings of choice. Puncture each bagel with a fork.
Bake for 10 minutes, rotate baking pan and then bake for 10 additional minutes. Once bagels are golden brown, remove and allow to cool. Slice, then garnish with your favorite toppings.
