Ingredients

  • 2 split chicken breasts, 2 leg quarters, 4 thighs
  • 2 t olive oil
  • 1/2 t garlic powder
  • 1/2 t celery salt
  • 1/2 t onion powder
  • 1/2 t cracked black pepper
  • 1/2 t coarse salt
  • (1/4-ish t lemon pepper)

Step 1

Preheat oven to 425 (convection?)

Trim split chicken breast of any trim-able fat. Remove the small thin rib section and then cut in half. Pat dry.

Mix all spices together in small bowl.

Brush lightly with olive oil on both sides and sprinkle with spices on both sides. Don’t forget the cut edge.

Arrange chicken with thickest sides out and thinnest parts towards center of smaller everyday pan.

Bake until internal temp of 165. About 35-40 minutes.


Very good. However, had to turn off oven with about 10 minutes left, out of 40.
