Steak Roll-ups

Ingredients
- 2 thin cut strip steaks (approx. 1/2#)
- Onion, chopped thin slices
- Mushrooms, 5 med-large, about thinly sliced
- Baby spinach, fresh
- Garlic, fine mince
- Maple bourbon
- Agave syrup
- Butter
- Muenster cheese slices
- Blue/Gorgonzola cheese crumbles
- Fajita seasoning

Step 1
Pound steaks even thinner. Season both sides with fajita seasoning.
Melt butter in “scrambled egg pan.” Sautee onions to caramelize – season lightly with fajita seasoning. Add mushrooms to brown. Reduce heat and top with garlic. Later, increase heat and add a splash of bourbon. Then a very light drizzle of agave syrup. Reduce or turn off heat (but remain on burner), or remove from burner to cool. (Was waiting on John to come in from working on the Dragon - so there was early prep, followed by wait time.)
Heat oven to 400°. When cooled some, divide onion/mushroom mixture between steaks. Cover with fresh spinach. Add cheese crumbles. Top each with 2 slices of cheese. Roll – securing with 5 toothpicks.
Add more butter to the skillet and heat. Brown each side of the rolled steaks. Add a pat of butter to the top of each steak. Roast in the oven for 5-10 (8 when I made this) minutes.
When serving, top with the skillet butter.
