Ingredients

  • 2 onions, minced
  • 1/4 pound fresh mushrooms, cut into 1/4 cubes
  • 1 minced garlic clove
  • 1 carrot, diced
  • 1 bay leaf
  • 1 cup cubed ham
  • 1/8 teaspoon sage
  • 2 dashes tabasco
  • 1 cuo split peas
  • 1 1/2 quarts soup stock (chicken or beef)
  • 2 smoked ham hocks
  • 1/2 teaspoon sugar
  • 2 tablespoons butter
  • 2 tablespoons bacon fat

Step 1

Put fat, onion, garli, carrot, bay leaf and sage in a soup pot. Place overmodserratte heat and sauteuntilonion yurn yellow. Add peas, stock and ham hocks. Bring to a boil .Reduce heat and simmer for 1 to 2 hour or until meat is tender. Saute mushroom in butter until tender.
When peas ar tender remove ham hocks. Add peas to blender, and puree a little at a time.
Combine the peas soup with mushrooms and add sugar, tabasco and pepper.
