Ingredients
- Sauce:
- 12 oz Fettuccine
- 2 TBS olive oil
- 1 lb raw shrimp (peeled, deveined)
- 2 tsp Cajun seasoning
- 4 TBS unsalted butter
- 8 oz Cream Cheese (or Greek Cream Cheese, or Neufchatel)
- 1 1/2 cups shredded Parmesan
- 1 1/2 cups milk (or almond milk, coconut milk)
- 1 tsp garlic salt

Step 1
In large stockpot, prepare noodles as directed. Drain. Return to stockpot.
In medium sauce pan, melt butter. Add milk & cream cheese. Cook over low-medium heat until cream cheese is melted, whisking often. Stir in Parmesan. Continue cooking over low-medium heat until cheese is melted, and smooth (no lumps), whisking often. Whisk in garlic salt. Pour over noodles.
Heat olive oil in large skillet. Stir in shrimp, spreading them evenly along the bottom of the pan to ensure even cooking. Sprinkle Cajun seasoning evenly over shrimp. Cook 2-3 minutes on each side, until pink. Serve over fettuccine Alfredo.
