Ingredients

  • 2 tablespoons Olive Oil
  • 4 each Green Onions -- thinly sliced
  • 4 each Garlic Cloves -- thinly sliced
  • 2 teaspoons Dried Oregano
  • 2 pints Cherry Tomatoes -- halved
  • 1 x Kosher Salt
  • 1 x Black Pepper
  • 1 1/2 lbs. Shrimp -- peeled/deveined
  • 2 tablespoons Fresh Mint -- chopped
  • 4 ounces Feta Cheese

Preparation

Step 1

1. Preheat oven to 475℉ with rack set in upper third. Heat oil in large skillet over medium heat. Add green onions, garlic and oregano. Cook, stirring 1 minute, until fragrant. Add tomatoes and cook over medium, stirring occasionally, until no liquid remains in skillet; about 10-15 minutes. Season with salt and pepper.

2. Add shrimp and mint to skillet. Stir to combine then transfer to 8" square baking dish. Crumble feta over top.

3. Bake until liquid is bubbling and cheese is beginning to brown; about 15-20 minutes. Sprinkle with additional chopped mint.
