Ingredients

  • 2 onions
  • 1-2 Tbs oil
  • 2 medium zucchini,unpeeled and cut into chunk size
  • 8 cups water
  • 1 lb fresh pumpkin or butternut squash cubed
  • 1 large white potato
  • 1 cup dried lentils(pink ones)
  • 2-3 scallions,diced
  • 1 Tbs salt
  • 1/3 tsp pepper
  • 1/4 tsp dried mustard powder

Saute onions,add rest of ingredients. Blend with an immersion blender and leave some chunks of vegetables.
