Ingredients
- 12 small red potatoes
- 6 slices bacon
- 1/4 cup butter
- 2/3 cup cream
- 1 teaspoon salt
- 1/8 teaspoon pepper
Preparation
Step 1
Scrub and quarter potatoes. Do not peel. Cook in salted, boiling water until tender. Cut bacon in 1-inch pieces and cook until almost crisp. Drain potatoes and leave in pan. Add butter and allow to melt. Mash potatoes with peels. Add cream, salt and pepper. Stir to combine. Potatoes should be lumpy. Stir in bacon. 6 servings.
