Ingredients
- 3 egg whites
- 1/2 cup sugar
- 20 ritz crackers, crushed
- 1 cup pecans, finely chopped
- 1/2 pint heavy whipping cream
- 1/2 cup sugar
- 1 t vanilla

Preparation
Step 1
Preheat oven to 275
Generously butter a pie plate.
Beat egg whites until stiff.
Add sugar and beat until mixed well.
Stir in pecans and crackers and mix well.
Spoon the mixture into the pie plate and cook for 50 minutes.
Take pie out of oven and cool completely.
In a chilled mixing bowl, beat whip cream until stiff peaks form.
Add sugar and vanilla, mixing well.
Spoon over cooled pie and refrigerate overnight.
