Ingredients
- 4 spicy Italian sausages
- 1 lb cherry tomatoes
- 1 large red onion, cut through core into 3/4" wedges
- 1 head garlic, cloves peeled and sliced
- 2 Tbsp olive oil
- 2 Tbsp sherry vinegar
- 2 tsp herbs de Provence
- 1 can great northern beans, undrained
- 2 Tbsp fresh flat-leaf parsley leaves

Step 1
Preheat oven to 450º.
In a large ovenproof skillet, season the first 7 ingredients with salt and pepper and arrange in a single layer.
Roast until the sausages are browned and cooked through, about 30 minutes.
Gently stir in the beans and their liquid; sprinkle with parsley.
