Ingredients

  • 3 lbs red potatoes, chopped to 1/2” or 1″
  • 1 onion, chopped to 1/2” or 1″
  • 1 red bell pepper, chopped to 1/2” or 1″
  • 3 T olive oil
  • 2 t salt
  • 2 t onion powder
  • 2 t garlic powder
  • 1 t ground pepper

Step 1

1.Pre heat oven and baking sheet to 425 degrees
2.toss all ingredients in a large bowl
3.spread in a single layer over the baking sheet
4.**This is a large batch of potatoes. You can easily reduce the amount. For this large batch I check after 20 minutes and flip with a spatula. Then cook again for 20 to 30 minutes. Smaller batches will not need to cook as long so keep an eye on them.
