  • 8 8 8 Brussels sprouts, trimmed
  • 1 1 1 large sweet potato
  • 1 1 1 tsp minced garlic
  • 1/3 1/3 1/3 cup olive oil
  • 1 1 1 teaspoon cumin
  • 1/4 1/2 1/4 1/2 1/4 or 1/2 teaspoon garlic salt or powder
  • 1 1 to teaspoon salt pepper to taste
  • 1 1 1 tablespoon red wine vinegar

Preparation

Step 1

1. Preheat your oven to 400 degrees F.
2. Trim your Brussels by cutting off the little brown end.
3. Peel sweet potato and chop into 1-2 inch pieces. Add to a plastic bag.
4. Smash 2 cloves of garlic and add it to the bag.
5. Pour 1/3 cup olive oil over the vegetables.
6. Add cumin, garlic salt, salt, and pepper to taste. Shake to coat.
7. Line a large pan with foil.
8. Pour the veggies onto the pan.
9. Roast at 400 for about 40-45 minutes. T
