Cheesy Skillet Meatballs

Today, we have a nice, simple, dinner dish. I took my basic meatball recipe and did things a little different with them. First, they were cooked in a little canola oil in a skillet, let them drain. Then, finished baking them off in the oven with spaghetti sauce. The last few minutes, they are topped with shredded mozzarella cheese and put under your broiler. The cheese gets nice and melted, but, a little brown too. So good.

For the meatballs, you can use ground beef, turkey, chicken, or even pork. It's a great, versatile recipe that works with any of them.

Ingredients

  • 1 lb ground turkey (or beef/chicken/pork)
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 2 beaten eggs
  • 1 tsp garlic powder
  • 2 TBSP dried parsley
  • salt/pepper to taste
  • 24 oz spaghetti sauce
  • 1 cup shredded mozzarella cheese
  • canola oil, for skillet

Step 1

Preheat oven to 350 degrees.
In a bowl, mix together ingredients for meatballs. Form into approx 2 inch size balls.
In a large skillet, heat about a tablespoon of canola oil over medium heat. Cook meatballs in skillet for just about 5 minutes each. You just want to brown them a bit. Be sure not to crowd your skillet. If needed, cook meatballs in batches.
Remove them from skillet and let them drain.
Clean out any excess canola oil from skillet. Put meatballs back into skillet and pour in spaghetti sauce. Coat meatballs well in sauce.
Bake meatballs in oven for 20-25 minutes or until cooked thoroughly.
Preheat your broiler.
Sprinkle meatballs with mozzarella cheese. Place skillet under broiler for just a few minutes to melt cheese.
