Ingredients

  • 2 Tbsp. oil
  • 2 1/2 cups chopped cooked ham, divided
  • 1 cup chopped yellow onion
  • 1 1/2 cups chopped red bell pepper, divided
  • 6 large eggs, lightly beaten
  • 1 (12 ozx) can evaporated milk
  • 2 tea. chopped fresh thyme
  • 1 tea. salt
  • 1/2 ta.. pepper
  • 1 (20 oz) pkg. refrigerated shredded has browns (they used Simply Potatoes)
  • 1 (8 oz) block sharp Cheddar cheese, shredded

Preparation

Step 1

Preheat oven to 350 degrees.

In a 12" cash iron skillet, heat oil over medium-high heat. Add 2 cups ham, onions, and 1 cup bell pepper; cook, stirring occasionally, until tender, about 5 minutes.

In a large bowl, whisk together eggs, evaporated milk, thyme, salt and pepper. Gently fold in hash browns, cheese and ham mixture. Spoon mixture into skillet.

Bake until set in center, about 30 minutes.

Heat a medium skillet over medium-high heat. Add remaining 1/2 cup ham and 1/2 cup bell peppers; cook until browned and crisp. Garnish casserole with ham mixture.
