Ingredients

  • 3 cups cooked chicken (shredded or cubed)
  • 2 cups long-grain white rice
  • 16 oz jar salsa
  • 3 cups stock or water
  • 1 tbsp garlic powder
  • 1 1/2 tsp ground cumin
  • 1 tsp chili powder
  • 2 tsp sea salt
  • 8 oz sharp cheddar cheese, grated

Preparation

Step 1

1. Preheat oven to 350.
2. Layer chicken into bottom of 9x13 pan. Sprinkle rice over the chicken.
3. In medium bowl whisk together to stock or water, salsa, tomato sauce, garlic, cumin, chili powder, and sea salt.
4. Pour liquid mixture over chicken and rice, distributing it evenly.
5. Cover baking dish either with lid or foil.
6. Bake for 45 minutes
7. Remove lid/foil and sprinkle cheese on top
8. Bake additional 15 minutes or til cheese is melted to liking.
