Ingredients
- Chicken Mixture:
- 2 lbs. Chicken, cubed
- 1/3 cup cornstarch
- 3/4 tsp salt
- 1/2 tsp pepper
- 1/4 cup olive oil
- Sauce Mixture:
- 2/3 cup brown sugar
- 1 cup pineapple juice
- 1/3 cup soy sauce (gluten free)
- 1/2 cup pineapple, crushed

Step 1
1. Combine cornstarch, salt and pepper in a gallon baggie. Add chicken cubes and toss until completely coated.
2. Sear chicken in olive oil over medium heat for about 7 minutes, turning occasionally.
3. Combine sauce mixture ingredients in a small bowl. Mix well.
4. Place half of the sauce mixture, then cooked chicken, and then the remaining sauce mixture ingredients in slow cooker on Low for 4-6 hours.
5. Serve with rice or quinoa
