Quiche
Got this recipe from Laurie Ragsdale several years ago. It’s wonderful!
Because I use store-bought pie crust and they come in a package of two, as I’m preparing the ingredients I set up for 2 quiches (See photo here for how I did it for one quiche).

Ingredients
- Pillsbury pie crust (2 per box)
- 6 eggs
- 3/4 cup milk
- Salt & pepper to your taste
- Choice of veggies: (I use 1 bag of baby spinach (finely chopped) and one small onion (finely chopped))
- Baby Spinach (finely chopped)
- Zucchini (shredded)
- Broccoli (steamed)
- Mushrooms (sautéed)
- Small onion (finely chopped)
- Choice of meats: (I usually use ham or bacon)
- Bacon (cooked crisp and crumbled)
- Ham (chopped)
- Turkey (chopped)
- Sausage (sliced)
- Cheese choices - choose one: (I usually use swiss)
- 1-1/2 cups Swiss cheese (shredded)
- 1-1/2 cups white cheddar cheese (shredded)
- 1-1/2 cups gouda cheese (shredded)
- Fresh herbs for decoration (Basil, summer savory, tarragon, etc.)

Step 1
Pre-bake pie crust at 350 for 5 minutes (no longer)
Line warm crust with 1/2 the cheese of your choice (3/4 cup Swiss my choice)
Spread veggies on top of the cheese
Spread meat on top of the cheese and veggies
Make a small well in the center of the filling of the pie
Scramble milk, eggs, salt & pepper.
Slowly pour the milk/egg mixture into the well until it rises to the top
Now add tomatoes
Cover with the rest of the cheese 3/4 (for me, Swiss) and top w/herbs (if desired)
Bake at 350 for 45-60 minutes
Let settle about 10 minutes before serving so the cheese can settle.
