Tequila Rose Strawberry Cream Cobbler (Sommer) 0 Picture

Ingredients

  • 1 cup sugar
  • 1 cup self-rising flour
  • 1 cup butter (melted)
  • 1 cup sliced strawberries
  • 1/2 cup heavy whipping cream
  • 1/2 Tequila Rose
  • 1 TBS vanilla extract
  • 1 TBS double acting baking powder

Preparation

Step 1

Using a wire whisk, mix sugar, flour, butter, cream, Tequila Rose, baking powder, and vanilla together in the casserole dish/Corning Ware you're going to bake it in. (I prefer to use Corning Ware rather than glass because it cooks a bit too quickly in the glass and can blacken the edges a bit too quickly) Also, I love the pampered chef stoneware, but I have found that even the smallest stoneware (9x9 square) is a bit too big so I still use my larger corning ware.
After all is whisked (2-3 min) and mixed well with very few lumps, add strawberries and stir/place them evenly around.
Place some slices so that they rest on top

**BAKE**
Preheat oven to 425 and place UN-covered on rack and bake for about 50min give or take 10mins...basially just until it's golden brown and fluffy (bread like) on top and bubbling ? Depending on your oven, Remember, the cobbler will fall a bit after it's taken out of the oven! This is the hard part about the Tequilla cobbler, because I had to play with it alot to get it not to fall...adding the baking powder seemed to help...I will continue to try and perfect this...
Take it out and let it sit about 10min. Serve ? And that's basically it! ?

**SERVING**
Some people like it served hot, and some like it from the fridge or even room temp. I usually serve from the oven and then cover and place in the fridge after the first night and let people microwave it later if they want.

Oh, and I know this sounds kind of odd because I thought so too...but cobbler really goes great with sour cream on the side! It took my grandpa 3yrs to get me to try that..but when I finally did...omgoodness so good!! haha
