Ingredients

  • 1 1/2 cups flour
  • 1 cup old fashioned oats
  • 1 cup packed brown sugar
  • 1/2 tea. salt
  • 1/4 tea. cinnamon
  • 2/3 cup cold butter
  • 1 can (14 oz) Sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 1/2 teas. grated lemon peel
  • 1/2 cup shredded coconut

Step 1

For the crust and topping: In a large bowl combine the flour, oats, brown sugar, salt and cinnamon. Cut in the butter until crumbly. Press 3 cups into a greased 8x11 baking pan; set the remaining oat mixture aside. Bake at 350 degrees for 10 minutes.

IN a small bowl, combine the sweetened condensed milk, lemon juice, lemon peel and coconut. Pour over the crust. Sprinkle with the reserved oat mixture. Bake for 25-30 minutes or until the edges are brown.

Cool on a wire rack.
