  • 3 med large potatoes
  • 1 onion minced
  • 3 eggs
  • Herbs de Provence
  • Pepper
  • Sliced Ham - 4 thick slices
  • Buffalo Mozzarella



Step 1

Peel and mash the potatoes. Mince the onion and add to the potatoes. Add eggs to the potatoes along with 1 T Herbs de Provence and 1 t pepper. Mix.

Spread the potato mixture on a baking pan lined with parchment paper.

Bake at 392 degrees for 20 minutes.

Remove from oven and allow to cool a bit.

Place the sliced ham on the potato mixture and then top with slice mozzarella. Roll the potato, ham and cheese into a log along the short end of the rectangle. Bake at 350 degrees for another 20 minutes.

Remove from oven, allow to cool for 5 minutes, slice and serve.
