Ingredients
- 3/4 lb (345 g) lean ground beef
- 1/3 cup (75 ml) onion, chopped
- 1 tablespoon (15 ml) chili powder
- 1/2 teaspoon (2 ml) dry mustard
- 2 cups (500 ml) corn kernels
- 1 green bell pepper, diced
- 14 oz (400 g) tomato sauce
- 1 cup (250 ml) water
- 1 cup (250 ml) rice
- 1/2 cup (125 ml) grated cheddar cheese

Step 1
1. In a large skillet, brown the beef with the onion over medium high heat.
2. Stir in the chili powder & dry mustard. Add the corn kernels, green pepper, tomato sauce & water (if using quick rice, add 1/2 cup/125 ml of water only). Bring the mixture to a boil, stirring occasionally.
3. Stir in the rice. Reduce the heat to low. Cover the skillet & leave to simmer until the rice is tender; about 25 minutes (8 minutes for the quick cooking rice).
4. Serve sprinkled with some cheddar cheese on top.
