  • 8 to 10 small red potatoes, quartered
  • 1 1/2 tblsp. thyme oil (see below)
  • 2 Tblsp. Thyme leaves
  • 2 Tblsp. chopped fresh chives
  • Salt and Pepper

Preparation

Step 1

Heat oven to 400°F.

Place ceramic or tempered glass baking dish in the oven to preheat for about 10 minutes.

Combine all ingredients, tossing to coat potatoes. Remove baking dish from oven and add potatoes. Roast in the oven for 25 to 30 minutes, turning the potatoes halfway through the cooking process.

Place thyme sprigs in jar and fill with oil. Add garlic and seal the jar. Let sit for 12 to 24 hours to infuse flavors.

Good and easy to prepare! In addition, place 1 Tbsp. each of fresh rosemary , marjoram, and oregano into a large zip lock bag. Add 1/2 tsp salt,1/4 tsp pepper as well as all other ingredients. Mix well to coat, and into the oven.
THYME OIL;
8 TO 12 oz. extra-virgin olive oil
6 sprigs of fresh thyme
2 cloves garlic-halved
8-12 oz. oil jar with stopper
Preparation:
Place thyme sprigs in jar and fill with oil. Add garlic and seal the jar. Let sit for 12 to 24 hours to infuse the flavors.
Strain out thyme and garlic.Store oil in refrigerator for up to two weeks.
