Ingredients

  • 2 x 200 g Lattice biscuits
  • 125 g cream cheese
  • 125 g butter
  • 1/2 cup caster sugar
  • 1 tsp vanilla essence
  • 2 tsp lemon juice
  • 2 tsp gelatine powder
  • 1/4 cup hot water cooled

Preparation

Step 1

STEP 1 Dissolve gelatine in hot water and cool.
STEP 2 Beat together cream cheese, butter and caster sugar until well combined and creamy.
STEP 3 Add remaining ingredients and beat well.
STEP 4 Place lattice biscuits in base of a slice tin, sugar side down.
STEP 5 Refrigerate until firm.
STEP 6 Spread cream cheese mixture evenly over biscuits and top with more biscuits, sugar side up.
