Can't Beet 'Em Paleo Strawberry Brownies 1 Picture

Ingredients

  • 1 cup roasted beets
  • 1/2 cup coconut oil, softened
  • 3 tbsp almond or coconut milk
  • 4 eggs
  • 6 medjool dates, pitted
  • 1 tbsp vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 tsp cinnamon
  • 1/2 cup coconut flour
  • 1/2 cup unsweetened cocoa powder
  • 1 cup strawberries, chopped

Preparation

Step 1

Preheat oven to 350 degrees. Lightly grease a small 8×8 Pyrex baking pan.

In a blender, pulse or blend roasted beets, coconut oil, almond milk, eggs, dates, and vanilla extract until smooth. Pour into a large bowl.

To that bowl, add remaining ingredients, mixing well.

Pour batter into the Pyrex pan, spreading evenly (**I left 1/4 of the pan empty and kept my brownies a little higher/thicker- you could spread evenly for thinner brownies.)

Bake for 50 minutes, or until brownies are pulling away from the edge of the pan and/or done to your liking.
