Ingredients
- Sausage:
- 2 lbs ground pork
- 1 T. Basil (dried)
- 1 T. Parsley (dried)
- 2 tsp kosher salt
- 1-2 tsp black pepper
- 1-2 tsp ground sage
- 1/2 - 1 tsp cayenne
- 1 tsp garlic powder
- Hash:
- 4-5 small russet potatoes
- 1 small yellow onion
- 1 green bell pepper
- 1 yellow bell pepper
- Butter

Step 1
Combine Sausage ingredients and brown. Drain. Set aside
Peel potatoes. Boil ~20 minutes. Allow to cool. Julienne (smallest) using mandolin.
Fry potato hash browns with 3T. Butter. Brown and turn repeatedly until browning is well integrated. Add to sausage and fold together.
Chop onion and bell peppers (1/4 inch pieces). In pan with butter, cook until softened (onion translucent). Mix into sausage mixture.
Heat mixture until warmed. Serve (breakfast burritos?)
