Ingredients

  • 2 t extra virgin olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 T tomato paste
  • 2 T sherry or wine
  • 28 oz. can crushed tomatoes
  • 14.5 oz. diced tomatoes
  • 3 T fresh parsley, chopped
  • 2 T fresh basil, chopped1 t dried oregano
  • 1/4 t red pepper flakes
  • 1 t granulated sugar
  • 3/4 t kosher salt

Preparation

Step 1

In large saucepan, over medium high heat, add 2 teaspoons olive oil.

Once the oil is hot add the diced onions and saute for three minutes.

Add the minced garlic and saute for another minute.

Add the tomato paste and wine, mixing everything for another minute.

Pour n the can of crushed tomatoes and diced tomatoes and stir.

Add in the remaining ingredients and stir once more.

Bring the sauce to a boil, then cover and reduce the heat to low.

Let the sauce simmer for 0 minutes, stirring occasionally.

serve over pasta or with Skillet chicken meatballs
