  • 1 onion, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 carrot, roughly chopped
  • 2 garlic cloves, halved
  • 1 tsp. Italian seasoning
  • kosher salt
  • Freshly ground black pepper
  • 2 tbsp. ketchup
  • 1 egg
  • 1/2 c. panko breadcrumbs
  • 1 lb. ground beef
  • 1/2 lb. ground pork
  • 1/4 c. bbq sauce

Preparation

Step 1

1. Preheat oven to 400 degrees F. Line rimmed sheet pan with parchment paper.

2. In the bowl of a food processor add onion, celery, carrot, and garlic; pulse 3 to 4 times until finely chopped. Scrape side of bowl if needed. Transfer to a large mixing bowl; combine with Italian seasoning, 1 teaspoon salt, 1/2 teaspoon black pepper, ketchup, egg, and breadcrumbs. Once well mixed, add ground beef and ground pork. Mix by hand just until incorporated.

3. Divide mixture into 4 large ovenproof ramekins placed on a sheet pan. Brush meatloaf with BBQ sauce and bake for 20 minutes.

4. Change oven to broiler setting and cook until BBQ sauce glaze is slightly caramelized, about 3 to 5 minutes.
