Step 1
1. Preheat the oven to 425F.
2. Slice the potatoes into 3/4-inch-wide slices and toss with the oil, salt, cayenne, and cinnamon. Spread on a large ungreased rimmed baking sheet.
3. Roast, tossing occasionally, until tender and golden, about 25 minutes.
