Ingredients
- 2 tsp olive oil
- 1 medium onion, finely chopped
- 3 Tbsp all-purpose flour
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 3 cups low-sodium chicken broth
- 1 cup 2% milk
- 1 1/4 cups grated low-fat sharp Cheddar cheese
- Freshly ground black pepper to taste

Step 1
1. In a large pot, heat the oil over medium heat. Add the onions and cook, stirring, until soft, about 5 minutes. Stir in the flour, garlic powder, and salt and cook for 2 minutes.
2. Slowly whisk in the chicken broth and simmer the liquid until it thickens slightly. Add the broccoli and cook until tender, 7 to 10 minutes.
3. Remove the soup from the heat and puree using a blender, food processor, or immersion blender. If necessary, return the soup to the pot and heat over medium heat. Whisk in the milk, 1 cup of the Cheddar, and the pepper. Ladle the soup into serving bowls and sprinkle each with 1 tablespoon of the remaining cheese.
