German Jaegerschnitzel Hunter Style

Ingredients
- 500 g fresh mushrooms, white or brown
- 30 g bacon (Speck), cut in cubes (optional)
- 1 small onion, chopped
- 125 ml vegetable broth (instant) - How to make Vegetable broth from scratch -
- 125 ml heavy cream
- 1/2 tsp thyme, dried
- 4-5 tbsp chopped parsley
- milk or heavy cream as needed (or half and half)
- salt, pepper to taste
- 4 pork schnitzel
- flour, 1 egg yolk, bread crumbs (natural, no spices)
- clarified butter to fry the schnitzel

Preparation
Step 1
- Wash the meat and pat dry with kitchen paper. With a tenderizer pound the meat so it becomes thin.
- Spice with salt and pepper.
- Turn each slice in flour, then in beaten eggs and at last in bread crumbs.
- Fry meat slices in a pan with some clarified butter until they show a golden brown color evenly on each side.
- Set aside and keep it covered with foil in the oven on a low temperature.
- Wash and prepare mushrooms, slice them.
- In a pan melt clarified butter. Saute mushrooms on high heat for a bout 2 min. Remove from pan right away.
- Cut bacon in very fine cubes. Chop onion fine.
- If needed at some more clarified butter to the pan.
- Fry onions and bacon until onions are slightly brown.
- Now combine with mushrooms, broth and heavy cream.
- Spice to taste, add dried thyme.
- Let sauce simmer on low heat until it thickens, stir frequently. This can be for 10- 15 min.
- Add as much milk so the sauce gets creamy. The sauce should not be to liquid. First add a just a little bit and see the consistency of the sauce. Add more if needed.
- Remove pan from heat and add chopped parsley, if needed spice with salt and pepper.
- Place the schnitzel on a warm plate and pour the sauce over them.
Serve with Spaetzle, French Fries or fried potatoes.
Notes:
Broth
Should you use instant broth use organic broth. The broth from Knorr USA is not the same as the one you get in Germany. Knorr USA is using chemicals as ingredients, Knorr Germany does not. These chemicals will alter the taste and are not healthy!
Bread Crumbs: Never use spiced breadcrumbs for this dish as they will alter the taste. If you cannot get natural, unspiced breadcrumbs make them. Let French od wheat bread become dry, then grate it. These are the best bread crumbs for the Schnitzel.
