Ingredients

  • 1 onion, diced
  • 1 clove garlic, minced
  • 8 oz Tostidos Salsa, chunky mild
  • 1 oz El Paso Taco seasining mix, original
  • 1 can condensed cream of mushroom soup
  • 16 oz lean ground turkey (99% fat free)
  • 1/2 cup plain fat free yogurt
  • 1/2 cup fat free cottage cheese
  • 1 cup fat free cheddar cheese grated
  • 1 cup reduced fat four mexican cheese blend
  • 4 cups Benitos Nacho white beans chips

Preparation

Step 1

Preheat oven to 350 degrees.

Cook ground turkey with onion and garlic until no pink remains. Add taco seasoning, salsa and ⅓ cup of water. Cook until thickened, about 5 minutes and remove from heat.

In a large bowl, mix turkey mixture, yogurt, cottage cheese, soup and 1 cup of cheese.

Slightly crush chips (not completely, you don't want crumbs). Layer 1½ cups chips in the bottom of a 9x13 casserole dish . Top with ½ of the turkey mixture. Repeat layers. Finally top with an additional 1 to 1½ cups chips and remaining cheese.

Spray a piece of foil with cooking spray and cover casserole.

Bake 30 minutes covered, remove foil and bake uncovered for an additional 20 minutes or until hot and bubbly. Top with lettuce, tomatoes, yogurt, guacamole and olives if desired.
