Chocolate coated peppermint patties

Ingredients
- 5 cups powdered sugar
- 3 Tbs corn syrup
- 3 Tbs water
- 2 Tbs vegetable shortening
- 2 tsp peppermint extract
- 12 oz semi-sweet chocolate

Preparation
Step 1
1) In a stand mixer combine the powdered sugar, corn syrup, water, shortening and peppermint extract.
2) Mix until well combined and powdered sugar mixture starts to form a ball
3) Roll out peppermint patty fillings between 2 sheets of parchment or wax paper until 1/2" thick
4) Using a 2" round cookie cutter, cut out about 30 round peppermint patty filling, retooling the filling as needed to get 30.
5) Lay the patties on a parchment lined sheet tray and chill for 15 minutes.
6) While the patties are chilling, melt 2/3 of the chocolate over a double boiler.
7) Remove from heat and stir in remaining chocolate.
8) Use a for carefully dip the peppermint patties into the melted chocolate.
9) Lay on a parchment lined baking sheet and allow the patties to dry at room temperature.
