Ingredients
- 1 1/2 cups frozen blueberries
- 2 cups flour plus 2 Tbs,divided
- 1 1/2 sticks butter or marg
- 2/3 cup sugar
- 2/3 cup brown sugar
- 2 Tbs milk or soymilk
- 2 tsp vanilla extract
- 2 eggs
- 2/3 cup cornmeal
- 1 tsp baking powder
- 1/2 tsp baking soda
- pinch salt

Preparation
Step 1
Preheat oven to 375. Line a baking sheet with parch paper.
Let the blueberries thaw completely,for at least a couple of hrs. Once defrosted,drain all the accumulated liquid. Squeeze lightly to drain as much liquid from the berries as possible. Toss the blueberries with 2 Tbs of flour and set aside.
With an electric mixer,cream marg,sugar and brown sugar until smooth. Add milk,vanilla extract and eggs,one at at time,beating well to combine after each addition.
In a separate bowl,whisk together 2 cups flour,cornmeal,baking powder,baking soda,and salt, With the mixer on low,slowly stir the dry ingred into the wet mixture in the mixer.Beat until JUST combined.
Stir in prepared blueberries very gently to prevent the color from running. Using a meduim cookie scoop or a heaping tbs.scoop the dough onto the baking sheet,leaving room betw.each cookie,since they will spread. Bake until tops of cookies appear set.,about 11 min.
