12/02/17 - This was very good for both. Dan may have liked it a touch more than I did but I'd cooked it. I think it would benefit from not pureeing the wild rice as I'm having a tough time actually finding the rice in the finished produce. So if you make this again, try cooking the rice separately and adding after you puree the soup.

MUSHROOM****Creamy Bacon, Wild Rice & Mushroom Soup with Maple Syrup 1 Picture

Ingredients

  • 1 ounce dried mushrooms, mixed
  • 1/2 cup boiling water
  • 1 tbsp. olive oil
  • 4 strips bacon, cut into lardons
  • 2 tbsp. butter
  • 1 cup each chopped onion, leek and celery
  • 2 cloves of garlic, minced
  • 1 lb. mixed mushrooms (I used cremini (12 oz.) and shiitake (4 oz.) sliced
  • 1/4 cup Cognac
  • 1/2 cup wild rice
  • 3 cups stock (chicken or vegetable)
  • bouquet garni with 4 bay leaves, sprig each of thyme, rosemary, sage and parsley
  • 1/4 cup dark maple syrup
  • salt & pepper
  • 1 1/2 cups milk
  • 1/4 cup 35% cream or creme fraiche
  • 1/4 cup mascarpone, room temperature
  • 2 tablespoons chopped fresh parsley, minced, to finish
  • drizzle of truffle oil, to serve

Preparation

Step 1

Soak dried mushrooms in boiling water for 20 minutes to soften. Strain, reserving liquid, and mince finely.

Cook the bacon in the oil in a heavy bottomed pot until crispy and remove and set aside.

Add the butter to the pot, then add the vegetables and garlic and sauté until translucent. Add the mushrooms and cook until all the liquid has evaporated. Add the cognac and cook until it is almost gone.

Add the rice, stock, bouquet garni, maple syrup and salt and pepper.

Bring to a boil, reduce heat, cover and simmer for about an hour; until the rice is very cooked. Puree half of the soup with the stick blender.

Add the milk, cream, mascarpone and more seasoning if needed. Thin out with more stock if the soup is too thick.
