NOODLES****Spicy and Tangy Noodles With Black Garlic

12/02/17 - I liked this a lot. It's a nice change from your usual Chili Udon recipe and it's not as soupy and easier to eat. I haven't tried it on Dan and I'm not sure he'd like it, even as a side dish.

Ingredients
- 1 pkg. PC Udon noodles
- 2 - 3 cloves black garlic, thinly sliced
- 1 clove garlic, thinly sliced (didn't use)
- 1/2 Tbsp of extra virgin olive oil
- 1/4 Tbsp of sesame oil
- 2 green onions, finely chopped
- 1/2 Tbsp of store-bought red chili paste (with or without garlic) I used Sriracha
- 1 Tbsp of Chinese black vinegar
- 1 Tbsp of soy sauce
- 1/2 Tbsp of sesame seeds
- 1/4 Tbsp of water
- left-over shredded chicken, fish, beef, smoked tofu or pork (if making a meal out of it) I didn't use any protein although I think I would have liked a bit of something - chicken or fish - in it
- Fresh cilantro leaves for garnish for me

Step 1
Cook the noodles according to package directions and drain.
Heat the olive and sesame oils in a skillet large enough to hold the noodles and add the two garlics to the pan. Saute for a couple of minutes until the fresh garlic is cooked and the black garlic starts to sizzle and crisp.
Add the chili paste, vinegar, soy sauce and water and heat through. Add the noodles, sesame seeds and protein (if using) to the pan and toss to coat everything with the sauce.
Serve hot or at room temperature.
