Ingredients

  • 2 lb. bone-in and skins on chicken thighs/paper towel dry then seasoned with salt and pepper
  • 2 tbs. butter
  • olive oil
  • 6 cloves minced garlic
  • 1 onion sliced
  • 1 basket sliced brown mushrooms
  • 1 cup bourbon
  • 2 1/2 cup chicken stock
  • 1 cup frozen peas
  • 2 tbs. chopped fresh parsley

Preparation

Step 1

Med. High heat melt 1 tbs. and 1 tbs. olive oil. Sear chicken side down until golden, about 5 minutes. Flip then cook another 2 min. and set aside.

Put heat to medium and add more butter and saute garlic and onions and mushrooms until soft, about 3 minutes. Add bourbon and stock and simmer 5 minutes and then add 1 tsp. salt and 1/2 tsp. pepper. Simmer chicken for about 15 to 20 minutes. Add peas and sprinkle with parsley.
