Ingredients
- Filling:
- 2 cups P.A.N. Pre-cooked Yellow Corn Meal
- 4 cups water
- 2 tablespoon coconut, grated
- 1/2 cup raisins
- 3 tablespoons olive oil
- 2 tablespoons cilantro, chopped
- Salt to taste
- 2 lb beef, diced
- 1 medium onion, diced
- 1/2 medium red pepper, diced
- 2 garlic cloves, diced
- 2 tablespoon tomato paste
- 1/2 cup tomato sauce
- Salt
- 3 tablespoons olive oil
- 2 cups Cheddar cheese, grated

Preparation
Step 1
uce and cilantro and cook for 5 more minutes. Add beef and cook with the lid on for 10 minutes, stirring occasionally. Add salt to taste. Set aside.
Dough:
Mix P.A.N. Pre-cooked Yellow Corn Meal with salt, raisins, coconut, cilantro, water and olive oil until the dough is smooth.
Pour half the dough in a heat-resistant glass bowl greased with oil. Spread uniformly across the bowl. Next, cover the surface with beef and the remaining dough.
Add Cheddar cheese and bake for 20-25 minutes or until the cheese is fully melted and golden.
Serve with slices of fried ripe plantain.
