Ingredients
- 1 Pound Lean Ground Turkey
- 8 Ounces no salt added tomato sauce
- 1 1/3 Cup Shredded Cheese
- 2 Tablespoons Chili Powder
- 2 Teaspoons Cumin
- 2 Garlic Cloves Minced
- 1/2 Cup Yellow Onion Chopped
- 1/2 Cup Chopped Tomato
- 2 Pounds Cauliflower rice or 2 large heads of cauliflower riced
- ground pepper and sea salt to taste

Preparation
Step 1
Pre heat oven to 400 , on a baking sheet spread the riced cauliflower evenly ( I had to use 2 baking sheets) Cook for 30 min then set aside
In a skillet, brown turkey with minced garlic. As it starts to brown, add your seasonings, chopped onion, and tomato.
Add cooked riced cauliflower, tomato sauce and 1/3 cup of the cheddar cheese to skillet
Stir well and transfer to a greased baking dish
Top with remaining 1 cup of shredded cheese
Bake in the oven at 350 degrees for 10-15 minutes until cheese is melted you can broil for a few minutes to make cheese crispy too!
Divide into four equal servings.
Optional You can top it with greek yogurt and diced tomatoes
