Ingredients

  • 1 cup mayonnaise (1/2 regular and 1/2 low fat)
  • 1 head garlic
  • 1/2 tablespoon olive oil
  • salt and pepper
  • 2 - 4 teaspoons chipotle in adobe sauce, to taste
  • 1/8 - 1/2 teaspoon Ancho chili powder, to taste
  • 1 - 2 tablespoons fresh lemon juice, to taste

Preparation

Step 1

Cut the top off the garlic, place in a small ramekin, drizzle with olive oil and sprinkle with salt and pepper. Roast at 400 for 45 minutes. Set aside and allow to cool.

Transfer to mini food processor along with mayonnaise, half the lemon juice, chipotle and chili powder, and process until smooth and combined; season with salt and pepper and adjust other seasonings as needed. If necessary, thin with a little milk or water.

Transfer to a glass jar and refrigerate until needed.

Serve with duck fat fries or sweet potato fries or with fried calamari.
