Ingredients
- Meringues:
- 3 egg whites
- 1/4 tsp cream of tartar
- 1/2 c sugar
- 1 tsp grated grapefruit peel
- Fruit Topping:
- Blueberries
- Raspberries
- 2 lbs Strawberries
- 1/4 c sugar
- 1/4 c grapefruit juice

Step 1
Meringues:
Preheat oven to 200°
Cover large cookie sheet with parchment paper
Use Kitchen Aid Mixer with beater whisk.
Beat egg whites and cream of tartar until it forms soft peaks.
Sprinkle in sugar 2 T at a time.
Continue beating until stiff peaks.
Fold in grapefruit zest beating with beater whisk.
Using a large spoon, form about 1/4 c meringue into 8 each 3" mounds on cookie sheet and use spoon to form an indentation in the center of each.
Bake for 2 hours or until firm and dry.
Turn off and leave in the oven for at least 1 hour or overnight.
Store in sealed container at room temperature.
Fruit Topping:
Combine blueberries, raspberries and 1/2 of strawberries in a large bowl.
In skillet, combine sugar & juice.
Heat to boiling, stirring constantly, and boil for 2 minutes or until clear.
Add remaining strawberries and cook 1 to 3 minutes until berries soften slightly. Pour mixture over uncooked fruit and stir gently.
Place meringues on serving plate.
Top with a dollop of Cool Whip, and berries, drizzling grapefruit syrup over all.
Serve immediately.
