Ingredients

  • Makes 3 servings
  • 6 large uncooked shrimp deveined and cut in thirds
  • 1/2 cup uncooked aborio rice
  • 1/2 small onion chopped
  • 1/2 chopped bell pepper
  • 1 scallion sliced
  • 1 TBS minced garlic
  • 4 oz chicken chorizo (use home made turkey chorizo)
  • 10 1/2 rotel tomato diced
  • 1/2 cup fat free chicken broth
  • 1/2 cup frozen peas
  • 1/2 tsp saffron
  • 2 TBS hot water
  • 1 tsp salt
  • 1 //2 tsp paprika
  • 2 tsp extra virgin olive oil

Preparation

Step 1

In small bowl combine saffron with hot water to dissolve

Heat 1 tsp oil in large skilled over high heat. Cook shrimp untique opaque, about 2-3 minutes per side, remove to plate.

Add remaining tsp of oil . Add chicken, onion, pepper ,scallion , salt and pepper.

Cook stirring often until vegetables begin to become tender, about 5 to 6 minutes.

Add garlic to pan, cook stirring a few times, about 1 minute. Add tomatoes, paprika and rice; stir to combine. Add broth and saffron water. Bring to boil and reduce heat to medium low and bring to simmer, cook for 15 minutes, covered.

Stir in peas and shrimp. Continue to cook undercovered until rice is tender and begins to dry on bottom of pan. Yields about 1 1/2 cups per serving
